Stafford's just tough to beat. He knows how to shift protections, he and his receivers run the toughest routes in the league and are able to get the ball out, and he knows what to do when his receivers get a free release. That all plays into pass protection. His offensive line is better than Darnold's (significantly), his tight ends are the equal of ours (we trained Parkinson too well), and their backs can pick up blitzes.
