Enough about me.


WTF are yall doing?

I truly enjoy hearing the different plans and strategies.

Red beans and rice with cornbread here. Had a ham bone in the freezer from Christmas, cooked that down yesterday to make some pork broth. Soaked the salt pork and red beans overnight. Diced up the salt pork, cut up all the andouille sausage, threw that in the Dutch oven and browned all the meat. Used the rendered fat from that to saute the mirepoix, threw the meat back in, add the pork broth and red beans. Added cayenne, smoked paprika, thyme, sage, oregano, bay leaves, a little bit of rosemary, and salt/pepper. That will cook down for a few more hours.

Long grain rice, pretty simple.

Basic cornbread recipe nothing too crazy there. Whipped honey butter with some salt.

It's been cold and rainy, and everyone in the house had a cold. Red beans and rice sounds like a good cure.

As speculated above, it is a bit dryer than a brisket would be but…..

It’s not to dry by any means.

It’s extremely tender and has tons of flavor.

I’ll certainly do again.

Looks like it turned out well!

Maybe you did, not sure, but I wonder if a dry brine overnight might help it retain some moisture during the cook.

Actually I did season it last nite, and it sat in fridge till 6AM, let it rest on counter top until around 9:30 before putting it on the smoker.

Next time I’ll start around 325 or so to set the bark a bit more, then drop to that 225-250 range to finish.

ETA
also believe I’ll pull at 175-180 instead of going to 190

I’m not changing anything… steady dose of IPAs… chicken nachos (already eaten)… Tez jersey from AFC years…. You don’t slap Santa Clause… I’m not jinxing it… Dance with who brought you!

Looks tasty. Nothing a little au jus couldn't fix in a pinch. With some fresh french bread....😋

Where abouts down South? I spent 16 years between Florida and Louisiana. Love the southern lifestyle and the people (generally) are awesome. Cuisine is the best in the U.S., especially the Gulf seafood.
Best food ever…those places you’ve been.

I spent some time in FL, LA, and MS

Ham and cheese Hot Pockets. Partially thawed (in wrapper) then, unwrap and cooked slowly to bring out the lovely texture of the breaded wrapping. Cook time varies, depending on commercial breaks. Once done it'll be place gently on a plastic plate to bring out the "charactor" of the dish. MAYBE, if I'm feeling froggy, placed on a bed of leafy greens. I'll enjoy with a finely chilled can of Coke Zero. Thats good retirement eats!!!
