I'll try to give my input as best as I can to anyone looking to make the trip. I'm not very good on suggesting hotels or anything like that, but regarding gameday stuff I can be of help!

Actually, there is tailgating at the Superdome itself, however it's only on the top levels of the Dome garages which aren't open for single game parking. Spaces are sold on a season basis to season ticket holders so unless if you can find a Saints STH selling a parking pass for the game that happens to be on the top level, you'll have to tailgate elsewhere.
However, Saints fans are typically very open and welcoming regarding visiting fans. You can just walk by some tailgates and strike up a conversation and once they find out you're from the PNW and traveled to the game, odds are someone's going to ask how you're enjoying your visit thus far and of course "if you ate yet?" :irishdrinkers:
But as you said, there are going to be tailgates all over the place. One hotspot is along Claiborne Ave. directly under the interstate on the west side of the Superdome along with all the various surface lots and parking garages throughout the CBD, or Central Business District.
Regarding the open alcohol though, that only applies to
plastic cups/bottles and
cans. Don't try and carry glass bottles because you'll likely get cited by NOPD.

For those that have never been to a game in NOLA, there is a million small lots, not a 100 big ones.

Nailed it. Lots that are around a 5-10 minute walk to the Superdome will probably cost you around $20 or so, but get there early because they fill up fast. Closer to the Dome the more they'll go up, but are still reasonable. Not sure where you saw the $150 price but damn, I'll certainly stay away from there myself.

One alternative I'd suggest if you don't mind a little bit of a walk would be parking in the garage at Harrah's Casino for free and going play the slots before walking the 1.1 mile up Poydras St. to the Superdome. It's free 24-hour parking but it's a hell of a lot cheaper going play the penny slots for a little bit and get a drink instead of shelling out $20-30 for parking maybe only a 1/2 mile closer? Never done it personally, but I've heard of people doing it so it's not uncommon at all.

Pmedic nailed it. It's best to always be mindful of your surroundings and those sitting in the vicinity and it's perfectly acceptable to cheer on your team when something happens in your favor but always be courteous and not actively attempt to jeer and provoke home fans, not only us but at any away stadium. You never know how much alcohol someone has already pounded into them that day and that liquid courage always seems to escalate situations a hell of a lot faster than it would under normal circumstances between two sober people.
A good rule of thumb to follow is if you wouldn't like opposing fans doing it to you at the C-Link, it's best to try and avoid doing it in someone else in their own house.

Yeah, 5.5-6 hours seems about right. Just depends on the traffic leaving Houston and entering New Orleans. If you're driving in on gameday though and you plan on wanting to tailgate, I'd leave as early as possible from Houston because the traffic on I-10 and exit to the Superdome can be a nightmare in the hours leading up to the start of the game.
And you're staying at the Hyatt? Oooooh, big spender! :mrgreen:
