Burnt ends are from the brisket point, the fatty part. They have a cracklin sort of texture, but meatier. Used to be a secret delicacy that barbecue joints reserved for special customers who knew about them, and requested them. They've become well known and popular now. Quality has suffered with popularity. Kind of a shame, but at least more people get to enjoy them now.I thought the burnt ends were cut off the ribs.
