Bill Simmons is #1 by a mile for me. He's such an entertainer and so everyman that I think a lot of people miss how intelligent he is. He's a seriously smart dude, knows the advanced stats as well as anyone and uses a very wide base of information. He's good with the eyeball test as well. He's just a guy that "gets it", which is also very rare.
I also really like Mark Schlereth, who also happens to be a closet Seahawks fan (he's from AK). I honestly can't think of a single instance where I disagreed with him. His analysis is always cool-headed and well thought out.
I often disagree with Mike Mayock- BUT- I still really like him because he always has informed reasons for his opinions, and he's very eloquent in expressing his reasoning.
I really enjoy reading Matt Waldman's draft stuff, we usually agree on prospects, and he's someone that's not afraid to go against the grain when the majority gets it wrong (Russell Wilson, etc). He knows football better than most, better than lauded types like Cosell, IMO.
I like Todd McShay and Mel Kiper. McShay is the more insightful one of the two, but both are good at what they do, which is to bring personality.
Jon Gruden is terrific, it killed me that he wasn't a part of the 2013 draft coverage. I hope that's not because of the fit he threw over Wilson during the 2012 version.
Adam Schefter is maybe the best reporter in sports. I respect the heck out of Chris Mortensen, as well. Suzy Kolbert and Erin Andrews are true professionals.
Oh, and 80's beard. He's awesome. Troy Aikman is surprisingly good as a color commentator too.
Last but not least, Brock Huard has to be mentioned. He's way too smart for a former jock (he was very, very much on the R. Wilson train before the draft). He's terrific on radio and probably one of the 10 best football color commentators out there.
