How that we have re-signed Taylor, can knowledgeable folks on "student of the game" help with analyzing his game? Why is he good at sacking QB but suck at run defense?

I will not go into a whole bunch of x's and o's on this question, because it boils down to the players attitude. Setting the edge is about desire to beat the blocker. Taylor has no desire to take on a blocker head on. His play has always been predicated on his quickness allowing him to get around the blocker. Setting the edge is not exactly about power, it is about leverage while you grapple with the blocker. Taylor seems uninterested. Hopefully, Macdonald, Durde and Hinds can motivate him to up his game.

By setting the edge, does it translate into tackling the RB and putting body in front pulling guards-tackle-tightend?

The point of setting the edge is to make sure that the running back does not have a clear lane to the outside. By keeping the blocker you are taking on from turning you, you force the running back to try a lane to the inside where the pursuit from your teammates should be able to make the tackle.

It's not just Taylor being bad at edge contain. I was too optimistic about Taylor at one point and so compared him with Crosby's initial similar struggles with edge contain, including the patented spin move towards the QB when the ball carrier is going by the other way. It was a bad comparison because Crosby was never afraid of getting physical.
Watch the opening play in our week 14 loss to the 49ers where McCaffrey ran for 70+ yards. Taylor #52 is lined up on the right side in the targeted gap, but you might have to watch it a couple of times to see what happens to him.
If Taylor fights through that block then it's a tackle for no gain. Unfortunately, Deebo Samuel (#19) completely dominates him 1 on 1, causing Bobby to be out of position as well. Of course the real problem here is that the 49ers drew this play up knowing that their WR would manhandle Taylor.
A big part of line play comes down to willingness to be violent and Deebo has it while Taylor just doesn't.

That was a classic alley where CMC just ran right through without even an arm tackle attempt. With that said Taylor could have done a better job of stacking and shedding but other players behind him were in poor position as well. Defenders are always taught to take away outside lanes and to force offensive players to the inside. The problem is the defenders behind Taylor over committed to the outside and CMC cut inside.
