Found this online and thought it perfect for this weekend. My wife has had the perfect receipe as far as I'm concerned forever. Don't know where she got it but we have done it this way for years and its pretty close to this internet method.
Place eggs in cold water
Bring to full boil
Turn off burner and cover with a lid for 30 minutes
Run cold water on them flushing the hot water out of the pan
Wait about 10 minutes, poor that water out and run cold water on them again.
This method stops the cooking completely.
As I said we've used this method for years with great success. And if you don't know it the fresher eggs are the harder they are to peel. Sounds dumb but its true.
